Mezcal Koch produceres af Hernández familien fra San Baltazar Guelavila.
Den er opkaldt efter den tyske botanist Karl Heinrich Koch. Cirilo og Pedro står for destilleringen, begge sønner af Don Cosme Hernández, som var master destiller for Alipús i San Baltazar.
Til produktionen af Koch bruges både vilde agaver samt opdyrkede agavefrugter. Mezcal fra området San Baltazar er ofte kendetegnet ved deres florale noter og den karakteristiske røgede sødme de har.
